OBX Shrimp And Grits With Scratch Kitchen And Catering

White Cheddar & Chive Shrimp and Grits
Ingredients:
Sautee
-
1lb peeled and deveined 26/30 (large or extra large) shrimp
-
1lb cut smoked andouille sausage (quartered)
-
1 medium diced green pepper
-
1 medium red onion (julienned)
-
1 vine ripe tomato (chopped)
-
3 cloves chopped garlic
-
1 cup white wine
-
1 bunch chives
-
Olive oil
-
Hot sauce
-
¼ stick of butter
-
Blackening spice (optional)
-
Hot sauce of your choice
-
Spring onion for garnish
Grits
-
1 cup Quaker Quick Grits
-
3 cups Water
-
1 cup milk
-
¼ stick of butter
-
1 bunch chives
-
1 lb block white cheddar cheese
Directions
In a medium saucepan, bring 3 cups water, 1 cup milk, ¼ stick of butter, and salt & pepper to a boil. When at a rapid boil, stir in 1 cup grits and whisk vigorously until cooked (about 4 minutes). Fold in cheese & chives and set aside to cool (about 20 minutes).
In a large saute pan over medium to high heat, add olive oil to coat the bottom. Add onions, green peppers, tomatoes, & garlic. Sautee for 2 minutes. Add shrimp and sausage, sautee 2 more minutes. Season with salt & pepper, blackening spice and a few dashes of your favorite hot sauce. Deglaze the pan with white wine and let reduce for 2 minutes. Add ¼ stick of butter and squeeze of lemon.
You are now ready to plate! Garnish with additional chives and spring onions.
